Carbless Cauliflower Pizza

A healthy alternative to your usual pizza base – a cauliflower base!


Now I can imagine some people looking at this and thinking "surely it just tastes like you're eating baked vegetables with some cheese and other toppings...".


I can assure you that it does not taste like that, and actually tastes bloody fantastic considering there is absolutely no flour or yeast involved!!


For toppings, I chucked on a spicy tomato pasta sauce, cheddar cheese, chorizo, and some spinach and broccoli purée. But of course, this is essentially your pizza. So feel free to go crazy with the toppings.


INGREDIENTS FOR PIZZA BASE

1 cup almond flour/ground almonds

1 whole cauliflower

2 eggs, whisked

1 tbsp garlic powder

1/2 tbsp onion granules (optional)

Salt & pepper

Any other herbs/spices you want to add to your base (e.g. oregano, Italian herbs, etc.)

Olive oil


TOPPINGS

Tomato base (I used a pre-bought pasta sauce)

Mozzarella or cheddar

Any other toppings that you may want!


METHOD

  1. Preheat oven to 200ºC fan and prep a baking tray with baking paper and a drizzle of olive oil.

  2. Using a grater or food processor, crumble your cauliflower to fine pieces – like cauliflower rice. Then drain the cauliflower rice as there will be a lot of water. The best way to do this is to grab a tea towel, place the rice into it, scrunch it up and squeeze as much water out as you can.

  3. Transfer the cauliflower rice to a large bowl and add in the ground almonds. Mix until well combined. Add the eggs and continue to mix well.

  4. Now add in the salt, pepper, garlic powder, onion granules, and any other herbs or spices that you desire. Be sure to season the base well!

  5. Spoon your cauliflower mixture onto the prepped baking tray and flatten it out into a circle. You want your base to roughly be the thickness of a £1 coin.

  6. Bake the base for about 17 minutes until it starts to go brown around the edges. Then remove from the oven. Crank up the oven temperature to 215-220ºC.

  7. Leave the base to cool for about 5 minutes, then add your tomato base, cheese, and other toppings. Put back into the oven for about 7-10 minutes. It may need less than this, but monitor your pizza until you see the cheese melting and bubbling.
